Tropical Coconut Gummies

Easy to make gummies made with coconut, pineapple, and beef gelatin!

Equipment

  • Small saucepan
  • Whisk
  • Silicon mold
  • Cup with spout for pouring

Ingredients
  

  • 1 cup pineapple juice
  • 1/2 cup canned coconut milk full fat
  • 1/4 cup beef gelatin

Instructions
 

  • In a saucepan, combine pineapple and coconut milk.
  • Turn on to medium heat until warm, not boiling.
  • Slowly whisk in gelatin until it is dissolved.
  • Pour mixture into a cup that is easy to pour from.
  • Pour mixture into a mold and refridgerate for at least 30 minutes or until completely set.
  • Carefully remove gummies from mold and store in fridge. Consume within five days. I have also had success with freezing these and tossing them into smoothies.
